Now that I no longer travel as much as I used to, one of my pleasures in life is going to a restaurant I've never been to before that caters to the local community, and very much like if I were doing this abroad, trying to work out what to order in a language everyone else knows, pointing at the menu and hoping for the best. Xi'an as you may not know, was the start of the northern route of the Silk Road in China and the first city in China to be introduced to Islam.

The food culture here started from the Zhou and Qin dynasties and flourished in the Tang Dynasty. That visit was reciprocated several hundred years later by Kyrgyz envoys trudging all the way to Chang'an, the capital of the Tang Dynasty. On their return trip, they brought back not only exquisite silk and porcelain but also a newfound friendship and the fruits of exchanges on catering culture such as ingredients, tableware, cooking methods and customs with countries along the route.
