One of the hottest Christmas items at Costco every year is the Prime Rib roast. There are not a lot of stores you can buy a full bone-in prime rib and Costco is one of them. They usually go on sale about two weeks before Christmas, and the tag says the shelf life is 5 days. The weekend before Christmas is the ideal time to buy it if you plan to make a roast for Christmas Eve or Christmas day. The problem is that the prime rib is really popular at Costco, and as soon as they are put out on the shelves they tend to go quickly.

Hi everyone. Based largely on the recommendations here I signed up for a Costco membership mainly to buy a rib roast for Christmas. I have a couple of questions. First, was the Costco boneless a good choice? I mean there are some local butchers with great product, all local, but prices can be absurd. I seem to recall that people here are happy with the Costco product. Salt a couple days out from roasting, then degrees until… , … then rest an hour while potatoes and maybe popovers cook before hitting it with degrees until seared. Finally, with this slow method should I expect relatively little drippings for a jus as compared to a conventionally higher heat? I would have actually considered getting two smaller units rather than one large one. You still have a couple of weeks to let them get some dry aging. If that is not possible or feasible, then buy when you can and leave in the cryovac until ready to prep and cook.
I do recommend using an electric knife to slice the roast — it will be quicker, and much easier on your arm muscles!
The Degree Oven. Every Christmas, I like to make a Prime Rib roast. I wanted to make sure it turned out perfect… so I bought a digital meat thermometer with a probe which I HIGHLY recommend to measure the temperature of your meat precisely. And what did I get? No pink in the middle at all. We ate it… but I was really disappointed by the outcome. It felt like a waste of expensive meat.

I would suggest that a rib roast is the king of Christmas dinner. Its the time of year where people will splurge on a big chunk of beef. My plan for dealing with those people, if there are any, is to not. The probe needs to be inserted into the center of the roast. It's a matter of personal choice although my food hero, Alton Brown says go with the loin end. Only attempt this if you have a sturdy metal pan — do not attempt this with glass, or a flimsy pan. Final temp for me that I like is right between for a large roast especially with that much fat content. So it must be removed. The seasoning used is a steak rub with olive oil and the prime rib is stuffed with whole cloves of garlic. A pizza steel or stone in the oven is always a plus as well.
Before this attempt, I've attempted baking a prime rib in oven a couple of times. Each time, I purchased prime quality meat with the bone in. Everyone told me bone-in beef idea since the bone acts like a natural stand, aka a standing rib roast.
