As long as there are birthday parties, there is a need for cupcake ideas. These cupcakes are my envision for Pikachu cupcakes perfect for a Pokemon birthday. Instead of buying cute little Pikachu cupcake toppers to put on the cupcakes, I decided to make an abstract Pikachu with candy melts. I created ears, tails, and rosy red cheeks to put into the bright yellow buttercream icing to resemble Pikachu. What I did was look at a picture of Pikachu and hand drew ears and a tail shape.

To make this Pokemon cupcake recipe, I started with my go-to vanilla cake batter — the airiness and the rich, buttery vanilla flavor in each bite sends me straight to heaven. Then, I made a decadent vanilla buttercream dyed with food coloring for the Pokemon art. I highly recommend watching the video at the bottom of this post before you start.
