Because Dooku doesn't rage like Vader and Maul who would amp Windu the most. And while Yoda didn't seem to go all out against Dooku either he definitely had more of a reason to take the fight more seriosuly than Sidious did.

For legends and G-canon anyway, I think the intention was that Dooku was supposed to be more dangerous. Don't post to forums Gen. He's also faster and stronger just like Anakin.
