Steakhouses are immensely popular in London, but none more so than Goodman. With three restaurants across the city in Mayfair, City and Canary Wharf — this one being on Maddox Street in Mayfair — Goodman defines quality and dedication to craft. Goodman will be the first to tell you that they make their own life difficult so that your steak is absolutely the best it can be, which means a thorough process that starts with expert sourcing and ends with specially imported charcoal ovens. The appeal of Goodman steakhouses in City and Canary Wharf, and indeed this one in Mayfair is wonderfully simple: great steak, great wine and great people. The menu here in Mayfair is refined and the beef on it at any one time accords to what is of the highest quality in the ageing room when the chefs start. Fillet, ribeye, sirloin and ever-changing bone-in specialties can be expected, as well a selection of other favourites — Barnsley chop, whole-roasted poussin, the Goodman burger and various seafood options — that change often, too.

Some twelve years ago, I went to a steak restaurant. Not any steak restaurant, obviously, but one of particular note. In this environment came one that had their own take on proceedings, and one rooted in the fundamentals. Their emphasis was on provenance, with the now-de riguer chalk board showcasing cuts of day, and dry-ageing their stock in-house so chefs could keep a keen eye on what could be served, and when. It was an approach to husbandry that continued after the farm, to the plate, as it were. The lunch sitting was absolutely packed. That chalkboard is still there, the dark wood and brown leather, the black and white photos. In the years since I last visited, however, one striking aspect leapt out at me on this occasion. If the availability of wines of that calibre are present, then that gives you some indication of the quality of the steak. This wine list is down to the collaborative talents of the sommelier, Alice, and Shane, the buyer, who happened to be lunching when I was there. We opened the batting with a glass of Illumination sauv blanc, not his selection, Shane advised, but a recommendation from a diner, he freely admitted. It appeared indulgent on ordering, but this collection opened the batting memorably, whetting the appetite and leaving plenty of room for the main event.
