Last year the insanely popular bake was my gingerbread NYC cookiesbut this year?! Please see my disclosure for more details! These beauties are without a doubt one of my favourite cookies I have ever done, and can you blame me?! Just look at how festive, fun and delicious they look!! The vanilla cookie dough colours, the chocolate, and all the red, white, and green! You can of course adapt the cookies and customise them in many ways…. In these cookies I used purely light brown soft sugar compared to my normal combination of light brown soft sugar and granulated sugar. You can use all white granulated sugar, this will just result in a light coloured cookie, or you can use dark brown soft sugar like in my gingerbread nyc cookies , and get a darker cookie with a more caramel flavour. Baking powder and bicarbonate of soda are different products, and do different things. Baking powder actually contains a small amount of bicarbonate of soda, but they are not interchangeable. The end results of the cookies should be the same, but by habit, I always use the plain flour! You could alternatively use orange extract, lemon , peppermint etc — flavour them how you like.

Please see my disclosure for more details! So, when I think of a cake, there are so many options it is slightly insane. You have normal two-layer cakes, my usual three-layer cakes, drip cakes, loaf cakes, and so on. However, one of my favourite?! And one of the easiest? Traybake cakes!

I have my white chocolate drip cake on my blog — which is definitely one of my favourites — and I have my two-tier celebration cake recipe — but I wanted to be able to just write a full back to basics post on a normal chocolate drip cake. I have gone into a fair amount of detail on other drip cake posts such as my mini egg drip cake with a YouTube video to go alongside , but I wanted to write everything I could think of for this one. The cake itself is a basic chocolate cake — this is because I find it much sturdier to work with compared to a chocolate fudge cake sponge. A simple chocolate Victoria sponge recipe is the dream for me!

I know it is still only November, but I honestly start the festive bakes as early as I possibly can. I am fully obsessed with Christmas, and as last Christmas was a little bit awful for everyone, I may have gone slightly overboard this year and my Christmas trees are already up. This year is the year of finally posting my homemade mince pie recipe for you guys, as I cannot cope with the messages anymore requesting them haha! I wanted to make this recipe as homemade as possible to make it worth posting, however, there is absolutely nothing wrong with using shop-bought products to make this. You can use shortcrust pastry you buy at the shop and simply roll it out the same buy a g block , or even use shop-bought mincemeat. SO… for these mince pies… I make a sweet shortcrust pastry.
