On our next trip in early , we found our way to Robuchon where we shied away from eating the famous 16 course degustation and settled for the six course prix fix menu. Our dinner that night introduced us to a new level of dining experience, impeccable service, artistic dishes and re-imaginings of classic french cuisine. When we finished we only regretted chickening out from going for the full 16 course service. Fast forward to our latest trip, and we have our entire evening devoted to Robuchon ready to go for the gusto, no matter what was on the menu we had a pretty good idea, as Robuchon does an excellent job keeping their website updated with the latest menus.

The restaurant offers a diverse selection of French-influenced tapas and entrees that can be sampled alone as a la carte options or can be experienced in thrilling comparison in tasting menus for a more complete appreciation of this culinary workshop. The long and varied menu focuses on simple and delectable contemporized staples of French cuisine. Diners can choose a nine course tasting menu, a selection of tapas or something off the traditional menu of full size entrees. The restaurant is very sleek and modern, with glossy black walls and furniture accented by red leather stools, bright red glasses, and fresh cut roses on the tables. A long counter runs along the right side of the restaurant, where guests can face the open kitchen and watch their food being methodically prepared. The restaurant is mostly empty when we arrive, but the chefs are hard at work already, quietly and diligently preparing for the rest of the evening. The colorful artwork is a celebration of food, honoring the beautiful variety of colors and textures the ingredients embody just as the menu celebrates their tastes. Large multi-paneled frames on the wall contain modern patchworks of different seeds, beans, nuts and spices; and in the exposed kitchen, shiny metal racks showcase perfectly aligned rows of vividly colored fruit and tall glass cylindrical vases of spices layered like sand art. Before our meal begins, we are brought a bowl of warm crusty country bread. This particular bread is made with the natural yeast of apple juice and grapes, which makes the dough rise slowly. It is served in a shot glass with a small spoon with which to scoop through all the layers of foie gras, port wine reduction and parmesan foam. The parfait is extremely rich, as would be expected, but the strong flavor of the port wine and the delicate texture of the foam keep it balanced and irresistible.

Appetizer heaven. The notes of parsley and the chunks of matsutake mushrooms brought this course full circle. Before we were even seated, the intricate choreography of service starts, as the table is moved aside so that Leah could easily take her seat. The farro risotto, rougher and more rustic feeling than a rice risotto, has a nutty quality to it that held up to the pungent white truffles. When we finished we only regretted chickening out from going for the full 16 course service. It is sprinkled with the same Piment d'Espelette seasoning that dusted the oysters. This is an excellent restaurant. It can be ordered unadorned or, for an earthier taste, topped with flecks of truffles. And the service was outstanding. Our selection of desserts consisted of cherry cheesecake, dark chocolate macaron, white chocolate pistachio chew, a white chocolate crunch, strawberry cheesecake, blueberry cheesecake, salted caramel chew and a pear gelee. The restaurant is mostly empty when we arrive, but the chefs are hard at work already, quietly and diligently preparing for the rest of the evening.

Julian Serrano, the executive chef behind this Bellagio hotspot, could only be described as an artist. I suspect they didn't let the meat rest till room temp before cooking.
