I think that if a person is obsessed with graphics and performance they should be investing in a PC rather than consoles. Once you draw you have to fill the red bar to actually fire off the shots. If you don't fill it all the way you have to at least place six shots on the target to trigger the actual firing. A headshot will fill the bar almost completely but it isn't necessary. So say you get a bunch of arm and leg shots. At least place one or two good shots in the chest.

You don't need to fill the bar completely, you just need to have more filled than your opponent. However, while it is possible to achieve this feat, rdr1 duel, usually enemies will often produce another weapon such as a backup sidearm and continue rdr1 duel try and kill the player.
