For those of you who are familiar with Argentina, you know that when it comes to meat the portions almost never leave you asking for more. Eating meat, and lots of it, comes easily to us and so the idea of an all you can eat meat buffet is nothing too terribly out of the ordinary for us. Siga la Vaca came into existence about 20 years ago when a group of entrepreneurs associated with the beef industry decided to try something a little different. They opened their first space about 40 kilometers off PanAmerican Highway and it has space to accommodate up to 50 people. The idea was that at a fixed price their customers could come in sit down and eat until their bellies burst or they had to be rolled out.

So many cultures around the globe are defined by their unique cuisine. A parrilla is in essence a barbecue grill upon which various meats are cooked and are generally visible from the dining room. Be sure to try the morcilla blood sausage! It is a beautiful restaurant overlooking the port. It was a magnificent experience although I did leave the restaurant completely stuffed and could barely walk! Note that we are not big meat eaters even though we hail from Austin , Texas, but the parrilla experience should not be missed on a trip to Argentina!

Carnivores take note: a new parrilla-style Argentinean grill is opening soon in Coral Gables. Siga la Vaca "follow the cow" has taken over the old Novecento space on the ground floor of Alhambra Towers at Alhambra Plaza and is scheduled to open by the end of October. Siga la Vaca's fixed-price menu includes an extensive salad bar with more than 30 items, all the meat you can eat, a choice of three sides and eight desserts, plus a half-bottle of house wine or pitcher of beer. Meals also include all-you-can-drink American coffee. Badaraco describes Siga la Vaca as an upscale parrilla steakhouse, but more affordable than some of the already established chains like Texas de Brazil or Fogo de Chao. The restaurant has a full bar and a wine list that includes bottles from Argentina, Italy, New Zealand, Australia and California. Badaraco says their homemade sangria is popular, and Siga la Vaca's bartenders also will be creating a daily special cocktail. Siga la Vaca has seats inside and will offer outdoor seating for up to 60 in season.
