Phoenix sits in a valley, but the city seems rather flat and endless until you're standing at its southernmost edge. From my vantage point on the northern slope of the foothills of South Mountain, you can see all the ranges that surround our home and give it its shape: the Phoenix Mountains to the north, McDowells to the east and the White Tanks to the west. But you don't have to go hiking to see this panoramic desert vista. It's on view right here in the parking lot of the T-Bone Steakhouse, a year-old institution that's still going strong as South Phoenix changes around it. Built out of adobe and river rocks from the nearby Salt River, the structure was originally constructed in the s as a private residence. It has also been a tearoom and a private vacation spot, says owner Kevin McElhanon. It became T-Bone in the 60s and was purchased by McElhanon's father in the early 70s. Today, when you drive past an array of Mexican restaurants along Central Avenue and into the rural landscape of plant nurseries and farms, you get a sense you're stepping back into an older Phoenix, or at least a cowboy one. But T-Bone isn't the kind of cowboy steakhouse where you ride a slide into the restaurant or the servers cut off your tie. It's the real deal, with faded checkered tablecloths and a time-tested mesquite grill that pounds out simply salted chicken and steak, made with the same recipes they've been using for 60 years, according to manager Leon Gomez. While the menu has cheeseburgers, filet mignon and an enormous ounce porterhouse, the iconic and most popular choice is the T-Bone. One of the most recognizable cuts thanks to the large bone that runs through the middle, the Tone comes from the short loin of the cow and includes two types of steak on either side of the bone: New York Strip on the long side and tender filet mignon on the short.
