This is the traditional way of enjoying tequila and mezcal that Sanchez, the owner of Viva Tequila, Salem's first tequila-centric bar, hopes to bring to folks. Viva Tequila is soft opening in North Salem in late January. Sanchez said she hopes people will be open to learning about the spirit in its varied forms as they enjoy it at the bar. I've always loved mixing drinks, testing new ingredients and infusions. It's something we do with our family and friends, and I thought, 'why don't we do it as a community? Sanchez said she noticed most Salem folks primarily drank tequila as shots with lime and salt, their faces curled in pained expressions as the spirit burned the back of their throats.
